Discover a bold new take on Thai cooking at Jungle

Thai grill and bar Jungle has opened its doors at Ann Siang Hill in Singapore. The restaurant showcases a diverse selection of regional dishes brought to life with carefully-sourced ingredients, artisanal in-house processes, and fire-glazed cooking.

Taking inspiration from Bangkok’s eclectic late-night watering holes and vibrant streets, Jungle presents a laid-back dining experience, with an open-fire kitchen and a classic funk and soul soundtrack.

The one-page food menu has something for everyone. The sweet, tangy pomelo-lemongrass salad is made with dried shrimp, homemade candied coconut, and Thai pomelo, while the Northern duck laab, rarely found outside rural northern Thailand, is a robust and layered blend of herbs and spices.

Jungle's grill section takes centre stage, with highlights such as the Southern style charcoal grilled chicken (gai golae), with skewers slow-cooked over hot embers and topped off with a hand-pounded red-curry glaze made from scratch. Look out for the Southern crab yellow curry as well.

Vegetarians can book ahead to allow the Jungle team time to make its vegetarian sauces and ferments. There are plans to make the vegetarian options permanent in the future.
