Bay Hotel Singapore’s Rumah Rasa will be launching a Ramadhan buffet every evening from 16 May to 14 June 2018.
Executive Chef Esa will feature highlights such as chick kut teh served with taupok (deep fried tofu puffs) as well as dried mushroom and garlic in the Ramadan Iftar Menu. The broth is cooked overnight to accentuate the flavours.
Another signature dish is ayam woku belanga, a marinated chicken seasoned in spice mixture from the Manado cuisines of North Sulawesi, Indonesia. Chef Esa recommends the bebek cabai ijo, Indonesian braised duck with his recipe of homemade ijo (green chilli sauce).
From Sundays to Thursdays, there will be live stations serving laksa asam and roti John. Seafood lovers will enjoy the cumi cumi hitam (stir fried calamari in squid ink sauce) and crayfish in chilli crabmeat and egg sauce.
Come Fridays, Saturdays and eves of public holidays, a live BBQ station will feature marinated sotong, fresh tiger prawns and kembong fish.
Indonesian sweet treats include the bubur kacang ijo (mung beans porridge with coconut milk and cane sugar) and assorted kueh-kuehs (snacks).
