Bangkok’s newest fine dining destination, etcha, introduces a borderless dining philosophy intertwined with European cooking techniques.
Expect an elegant, contemporary setting with plush décor, enhanced by seamless service. A neutral earthy palette of terracotta, beige, and green reflects etcha's deep connection to nature. The space is further enhanced by soft fabric accents, and warm lighting.

Grey pomfret with mint and pomegranate: The pomfret, meticulously dry-aged for enhanced texture and taste, is crowned with a vibrant granita and finished with a tableside drizzle of tangy pomegranate juice.

Squid with basil and caviar: Inspired by Chef Giacomo Primante’s childhood memories, this dish incorporates Japanese sashimi techniques to craft squid “pasta,” enriched with Thai-style coconut milk, Italian pesto, and French culinary precision.
Monkfish: This dish is a tribute to the chef's French culinary heritage, reflecting his respect for high-quality ingredients. Delicately-prepared monkfish is paired with zucchini flowers filled with a rich and velvety chicken mousse, celebrating tradition with a modern twist.
Black sourdough, lotus: This dish beautifully combines local and international ingredients to tell a meaningful story. The lotus flower mousse, inspired by Thailand and symbolizing purity, is paired with sourdough ice cream, representing the tradition of sharing bread. A rich chocolate biscuit ties these elements together.
“Our flavours are designed to evoke curiosity, inspire emotion, and create lasting memories. Meals become moments where culinary artistry meets storytelling,” said Chef Primante.
At the heart of etcha’s innovation is a dedication to sustainability and responsible sourcing. Chef Primante spent nine months collaborating with local farms and suppliers to ensure the use of premium ingredients while supporting Thailand’s agricultural communities.
“Every dish tells the story of its origins,” said Chef Primante. “Our approach is deeply rooted in respect for the environment and a commitment to preserving the integrity of each ingredient.”
Specific practices include sourcing organic produce, working with ecoconscious seafood providers, and using farm-to-table practices that reduce waste.
