MICHELIN Star Table at Grand Lisboa Palace to star Don Alfonso 1890 x L’Olivo

Wrapped in Versace’s signature Baroque patterns and the sumptuous gold and red tones of Don Alfonso 1890, this MICHELIN Star Table promises an exquisite dining experience with Italian ambiance. The handcrafted terrazzo floor with rosette and flower motifs is inspired by the historic Versace Villa on Lake Como, while the bespoke furniture and Rosenthal x Versace tableware echo Versace's Asian Dream motif. Paintings from Versace's Palace have been hung on the walls, interspersed with the fashion house's signature Barocco pattern.

SJM Resorts and the MICHELIN Guide have joined forces for the 4th consecutive year to present one of Macau’s most coveted dining experiences: the MICHELIN Star Table series.

This year will see Italian mastery within Grand Lisboa Palace Resort Macau on 18 and 19 October, in the form of Don Alfonso 1890, the Macau outpost of the Michelin-starred, family-owned restaurant in Sant'Agata sui Due Golfi, five-course lunches, and six-course dinners.

The MICHELIN Star Table will showcase the masterpieces from three Italian culinary maestros: Chef Andrea Migliaccio, Executive Culinary Chef of Jumeirah Capri Palace, including the two Michelin-starred L’Olivo; Chef Ernesto Iaccarino, from the family running Don Alfonso 1890 in Italy; and Head Chef Federico Pucci, who helms Don Alfonso 1890 in Grand Lisboa Palace.

Chef Migliaccio is renowned for his mastery of Mediterranean cuisine and vibrant colours and bold flavours in his dishes. He said: “It is an honour to be part of this ensemble and this unique event, which also represents an exceptional twofold opportunity: on one side, we will all be sharing the overall Italian culinary tradition with our friends in Macau; on the other, we will be creating connections between the different interpretations that coexist within the Italian gastronomic heritage.”

Chef Iaccarino added: “I am very proud to have this opportunity to showcase our Italian flavours together with Chef Andrea at the beautiful Don Alfonso 1890 in the Palazzo Versace Macau. We can’t wait for our guests to enjoy the flavours of the south of Italy.” Don Alfonso 1890 in Lavello boasts one Michelin Star and a farm-to-table philosophy that ensures the freshest ingredients from an organic farm, Le Peracciole.

Head Chef Pucci also said he is honoured to participate in the gastronomic extravaganza alongside talented chefs. "We can’t wait to share our passion for food with the discerning palates, celebrating the passion, artistry, and joy of sharing great food with others,” he said.

La Tour d’Argent to take over Le Beaulieu in Hanoi this October

Sofitel welcomes a legend of French art de vivre to the cultural heart and soul of Vietnam as part of its Diamond Jubilee celebrations. The exclusive collaboration reflects Sofitel’s timeless DNA: a desire to empower encounters between cultures, people and ideas. 

La Tour d’Argent, the historic 400-year-old Parisian dining establishment, will fly into Hanoi for the first time in its history to stage a culinary takeover at Le Beaulieu, the French restaurant at Sofitel Legend Metropole Hanoi. Le Beaulieu dates from 1901 and was recently selected by the Michelin Guide, while Sofitel Legend Metropole Hanoi, is Southeast Asia’s first and only Sofitel Legend hotel.

A national landmark that has stood on the banks of the River Seine since 1582, La Tour d’Argent (The Silver Tower) is a pillar of French gastronomic heritage. Helmed by Executive Chef Yannick Franques, it has been awarded a Michelin star for its classic yet contemporary style of French cuisine. The hotel'sChef de Cuisine Charles Degrendele trained at La Tour d’Argent, further underscoring the connections between these icons.

From October 23 to 27, 2024, La Tour d’Argent's expert culinary team will craft a five-course lunch menu and an eight-course dinner in Hanoi. One highlight will be Caneton Freìdeìric Delair, a signature dish that pays tribute to Charlie Chaplin, who spent his honeymoon at Sofitel Legend Metropole Hanoi in 1936.

Bhoomi by Milind Sovani is an homage to India's culinary heritage

Chef Milind Sovani, curator of Song of India, will be opening the doors to Bhoomi by Milind Sovani in Singapore on 26 July. 

The menu is filled with nostalgia, featuring age-old recipes from different regions of India. From the coastal delicacies of the Konkan region to the street foods of Indore, Bhoomi offers a rich tapestry of flavours that transport diners to India. 

“The concept of Bhoomi started taking root when I returned to India and revisited my childhood and the journeys I had made across India's rugged terrains and humble homes. My father, a proud employee of the Indian Railway, introduced me to the vastness of the network and the diversity of the country which I embraced,” said Culinary Director Sovani. 

“In my journey through India, I have been blessed to discover stories, traditions, and unique nutrition-preserving cooking techniques. I’ve cooked with grandmothers in village kitchens with hearts that embrace the land's spirit. With all of these experiences in the bag, I crafted dishes that were deeply personal, rustic, and true to their roots.

Discovery airs Hong Kong food series in Asia

Discovery Channel has premiered Kung Food! Hong Kong's Grandmasters of Cuisine, a show unpacking the complex and unique relationship of Hong Kong’s food landscape through the eyes of Michelin-starred chefs.

Hong Kong leads Asia's 50 Best Restaurants 2021 list with 11 entries. David Lai, Guillaume Galliot, Hideaki Sato, Ricardo Chaneton, Richard Ekkebus and Vicky Cheng, all chefs from Asia's 50 Best Restaurants, have been tapped to share their love for Hong Kong and how they create their plated masterpieces.

Chef Chaneton of Mono, Asia's window to Latin American gastronomy, said, "Mole is a sauce typical of Mexican cuisine, where you have 21 ingredients. For me, Hong Kong is a mole, and I see so much of Latin America in Hong Kong."

The show makes reference to the pandemic era. Chef Vicky Cheng of VEA, a one-Michelin-starred restaurant known for Chinese luxury ingredients cooked with French technique, opened a second restaurant in 2021. He said: "I had one goal in my mind - I didn't want to let go of any of my staff - either you do it 100% or nothing at all - honestly, it's probably one of the hardest things I've done, opening Wing, but it was a risk that I was willing to take."

Chef Richard Ekkebus, from two-Michelin-starred French restaurant Amber, adds: "For me, the fighting spirit of Hong Kong is its resilience. It's the resilience of the Hong Kong people of wanting to reinvent themselves constantly and rebouncing within any moment of challenge."

Tomo Izakaya introduces three new ramen dishes to Singapore

Popular Japanese izakaya restaurant Tomo Izakaya has started off the year with three new ramen dishes: Tokyo ramen; kai ramen; and shake-tantan men. All three are the brainchildren of Chef Hirotaka Murata, an expert in kaiseiki* sets.

Following a recipe that has been passed down for two generations by Chef Murata’s master, Tokyo Ramen (S$9.50 nett during lunchtime ) features a special shoyu blended soup base. The soup is made with ingredients such as bone marrow, chicken bones, niboshi (Japanese dried infant sardines), bonito flakes, vegetables, Japanese dried scallops and prawns.

Kai ramen (S$14 nett during lunchtime) and shake-tantan men (S$12 nett during lunchtime) are unusual in that the soup bases do not contain pork. The soup base for kai ramen is made using two types of clam: asari and hamaguri. Other ingredients used to enhance the taste of the soup include chicken bones, Japanese snapper bones and vegetables. The soup is paired with specially customised jade-green noodles, the first time green ramen noodles have been offered in a Japanese restaurant in Singapore. The ramen is then garnished with wakame seaweed and yuzi peel, which accentuate the soup’s seafood flavour.

Shake-tantan men features salmon bones and heads as well as a specially blended miso with salmon minced meat for its white broth, which is simmered over a tightly-controlled fire for five hours. The soup is then enlivened with sesame and chilli oil (辣油, la yu). Accompanying the soup are al dente ribbons of tantan mian.

Tomo Izakaya is available for corporate events and gatherings, and offers traditional Japanese dishes at affordable prices.

Sofitel SO Bangkok confirms chef lineup for So Amazing Chefs 2015

Sofitel SO Bangkok has confirmed that 12 celebrity chefs from around the world will be in Thailand for the 4th So Amazing Chefs 2015 taking place from 6 to 11 October 2015.

"This year's gastronomic festival is the most high profile event we've ever put together, with the constellation of amazing chefs representing a combined seven Michelin stars. The gathering highlights Bangkok as a foodie city, and promotes the exchange of epicurean ideas and inspirations," said Yves Mudry, General Manager of Sofitel SO Bangkok.

The So Amazing Chefs programme is packed with dinners and cooking classes, with the event highlight – the Culinary Showdown competition and gala dinner– taking place on 9 October with proceeds going towards the CCF Foundation under The Royal Patronage of HRH Princess Maha Chakri Sirindhorn. New additions this year include the introduction of special weekend brunches and an after-party which will feature guest DJ Chef Ferry van Houten on the decks.

Familiar faces from last year include Stephane Bonnat (Voiron, France), Laurent Peugeot (Burgundy, France), Didier Corlou (Hanoi, Vietnam), Alain Caron (Amsterdam, Netherlands), Ferry van Houten (Amsterdam, Netherlands), and Sofitel SO Bangkok's very own Executive Chef Paul Smart. Making a comeback from the inaugural So Amazing Chefs 2012 is Chris Salans (Bali, Indonesia):

  • Bonnat is Maitre-Choclatier at Bonnat, the longest operating chocolaterie in the world. He received two gold awards at the International Chocolate Awards 2015.
  • Caron, a Masterchef judge and author, also hosts his own cooking show. 
  • Corlou won Masterchef in France and is the chef owner of La Verticale and Madam Hien in Hanoi, Vietnam. 
  • Peugeot owns six establishments around the world, including SushiKai (Beaune, France), LP+Tetsu (Singapore), and LP Receptions (Pernand-Vergelesses, France). He is also chef owner of Le Charlemagne (one Michelin star) in Burgundy. 
  • Smart was Winning Challenger Chef of Ironchef Thailand in 2012 and 2013.
  • Van Houten is chef owner of Het Bosch in Amsterdam, Netherlands. 


Exciting new additions to the 2015 chef roster include Amsterdam-based Menno Post of two-Michelin starred restaurant The Bokkedoorns; Herve Rodriguez, chef owner of MaSa (one Michelin star, Paris), Jacques Pourcel, one-half of Le Jardin des Sens' Pourcel brothers (one Michelin Star); Frenchman Loic Villemin of Toya (one Michelin star, Faulquemont); and Thierry Renou of Le Patio Thierry Renou (one Michelin star, Arcachon).

Michelin star chef Nicolas Isnard to cook at Singapore's Sofitel So Singapore

Xperience, the signature restaurant and bar at Sofitel So Singapore, welcomes French Michelin star chef Nicolas Isnard to deliver fresh and sumptuous flavours from France to Singapore. From 4 to 8 November 2014, Chef Isnard will act as Guest Chef, bringing his Mediterranean and Italian influences and serving up rustic flavours in the classic French style.

Partnering with Chef Anne-Cecile Degenne, Executive Chef of Xperience, Chef Isnard will offer a daily set four-course lunch at S$45++, daily set five-course dinner menu at S$88++ and a Saturday 6-course Gala dinner at S$148++ or S$188++ with wine pairing. An à la carte dinner menu will also be available.

Originally from the South of France, Chef Isnard acquired a taste for cooking from his Italian grandmother. Famous for mixing traditional cooking with innovation, he currently co-owns the L’Auberge de la Charme restaurant in France, which earned a Michelin star within a year of its opening in 2008. The restaurant also boasts four Gault & Millau toques.

“As the culinary capital of Asia, Singapore is the place for gastronomic adventures and new experiences. Sofitel So Singapore strives to offer our guests an exclusive interactive culinary journey of the senses.
