Tomo Izakaya introduces three new ramen dishes to Singapore

Popular Japanese izakaya restaurant Tomo Izakaya has started off the year with three new ramen dishes: Tokyo ramen; kai ramen; and shake-tantan men. All three are the brainchildren of Chef Hirotaka Murata, an expert in kaiseiki* sets.

Following a recipe that has been passed down for two generations by Chef Murata’s master, Tokyo Ramen (S$9.50 nett during lunchtime ) features a special shoyu blended soup base. The soup is made with ingredients such as bone marrow, chicken bones, niboshi (Japanese dried infant sardines), bonito flakes, vegetables, Japanese dried scallops and prawns.

Kai ramen (S$14 nett during lunchtime) and shake-tantan men (S$12 nett during lunchtime) are unusual in that the soup bases do not contain pork. The soup base for kai ramen is made using two types of clam: asari and hamaguri. Other ingredients used to enhance the taste of the soup include chicken bones, Japanese snapper bones and vegetables. The soup is paired with specially customised jade-green noodles, the first time green ramen noodles have been offered in a Japanese restaurant in Singapore. The ramen is then garnished with wakame seaweed and yuzi peel, which accentuate the soup’s seafood flavour.

Shake-tantan men features salmon bones and heads as well as a specially blended miso with salmon minced meat for its white broth, which is simmered over a tightly-controlled fire for five hours. The soup is then enlivened with sesame and chilli oil (辣油, la yu). Accompanying the soup are al dente ribbons of tantan mian.

Tomo Izakaya is available for corporate events and gatherings, and offers traditional Japanese dishes at affordable prices.

The Butchers Club Burger serves up National Day fare for Singapore's 51st

For two weekends starting from 29 July, The Little Red Dot Burger will be available as part of The Butchers Club Burger Singapore’s National Day Set Menu. This is The Butchers Club Burger’s first National Day celebration in Singapore, and The Little Red Dot Burger is a fitting creation that pays homage to Singapore’s satay ayam (chicken satay).

The Butchers Club Burger’s Singapore-inspired burger features 140g of a grilled juicy chicken patty, with crunchy cucumber strips, freshly shaved red onions, caramelised pineapple is lathered in rich ginger peanut sauce, and served between two sesame buns. The Butchers Club touch was added by upsizing it to the usual Butchers Club Burger portion, and serving it with caramelised pineapple for that extra zest.

The National Day Set Menu (S$28++ for the non-alcoholic version) is a combination of popular local flavours: It will come with The Little Red Dot Burger, a side serving of straight-cut fries seasoned with curry powder and a chocolate, vanilla or strawberry milkshake. This set menu will only be available from 29 July to 10 August 2016.

Maziga opens at Clarke Quay, Singapore

Indian fusion cuisine: kebabs served in burgers.
Source: Clarke Quay website.
The new Maziga, at Clarke Quay, is an attempt by the team behind Punjab grill in Singapore to redefine the way Indian food is viewed.

Traditionally, Indian food has been identified by rich and spicy curries and succulent tandoori kebabs, the company says. With a new generation of chefs experimenting with traditional dishes using new cooking techniques and tools, and a new generation which likes to eat healthy and party hard, things have changed.

"We present traditional Indian favourites with new twists and in all new settings. The traditional kebabs of the Indian nawabs take an all new flavour when served in burger buns. Our mushroom cappuccino shorba takes Indian soups to an all new level.  Or try our traditional bhatti murgh tikkas served in Mexican style quesadillas. Whatever you try, be prepared for flavors and presentations you have not seen before," says the company in a statement.

Housed in the revamped The Cannery (Block C) in Clarke Quay, Maziga's ground floor houses Maziga Café while the upper level is Maziga Club, where disc jockeys spin the latest in Bollywood
and bhangra music.

Add your smile to Smile Singapore at Clarke Quay Central

The Smile installation at Clarke Quay Central is in progress.

Clarke Quay Central mall has announced Smile Singapore, an advocacy campaign that aims to promote a happier nation. This initiative is held in conjunction with Singapore's Jubilee celebrations, and is an ideal opportunity for companies to share their moments of joyful living in the little red dot.

"Happiness is contagious and by displaying photos of beaming faces, we hope to remind our fellow Singaporeans that there are thousands of reasons to smile in Singapore," said Caine Teo, head of Ape Works, the Creative Partner of the Smile Singapore Campaign.

Volunteers display some popular
reasons to smile as polled by
Smile Ambassadors and other sources.
The campaign aims to break its own Largest Display of Photos record* by collecting 10,000 smiling faces this year, 5,000 of which will form a giant photo mural.

From now till 3 May, Smile Ambassadors will be taking photos of smiling faces as well as collecting personal stories of what makes people happy to be in Singapore. Members of the public can pose for the camera at the live photo studio at Clarke Quay Central atrium and receive an instant 4R print keepsake. The photos will subsequently be showcased at the Clarke Quay Central atrium from 4 to 17 May.

A closer look at the work in progress for the photo mural.

Smile Singapore began the live installation of its urban photoscape of smiling portraits yesterday. The smiling portraits are printed by campaign event partner Fuji Xerox Singapore, laminated and pieced together with others to create a giant photoscape to be completed by 3 May 2015. The photoscape will line the first through third floors of Clarke Quay Central.

Upon completion, the photo mural is expected to break the national record of ‘Largest Display of Photos’ in the Singapore Book of Records. Smile Singapore is aiming to collect 10,000 smile portraits until the end of this year.

"This campaign is especially meaningful during Singapore's jubilee year as we, as an organisation and part of a young nation, count our blessings from living in Singapore," said Mavis Seow, Director and COO, Retail Business Group of Far East Organization, which owns Clarke Quay Central.

"We are delighted to be partnering with Clarke Quay Central in this Smile Campaign initiative. CSR is a big part of Fuji Xerox's core values and integrated at the core of everything we do. It is also a reflection of who we are and what we support as a company," said Bert Wong, Chief Executive Officer of Fuji Xerox Singapore, which is also celebrating its 50th year in Singapore in 2015.

"For every photo submitted to Smile Campaign, we have pledged to donate five dollars to our main beneficiary – Beyond Social Services – to enable and empower children and youth from less privileged families to help them achieve better opportunities in their life."

*The Smile Singapore campaign, a project by Clarke Quay Central, was first conceptualised after a Gallup Poll in 2012 when Singapore was rated as the most emotionless and unhappy nation in the world. A total of 1,909 smiling portraits were collected and laid out in Clarke Quay Central in 2013, breaking the Singapore's Book of Records for the ‘largest display of photos'. The most recent World Happiness Report ranked Singapore 24th , an improvement from the previous surveys done.
