After the success with Yardbird in May, LMO Freshly Baked at Mandarin Oriental, The Landmark Hong Kong continues its Tastemaker Series this June with Bar Leone. Recently named Asia’s Best Bar 2024 and ranked No. 2 on The World’s 50 Best Bars, Bar Leone is renowned not only for cocktails but also for food. The bar is expected to bring Roman flair to the LANDMARK Atrium with a menu of comfort-driven dishes created exclusively for LMO Freshly Baked.

"The Tastemaker Series is about showcasing the diversity and excellence that make Hong Kong a world-class dining destination," said Chef Richard Ekkebus, Director of Culinary Operations & Food & Beverage at Mandarin Oriental, The Landmark Hong Kong, and curator of The Tastemaker Series.

"Bar Leone’s distinctive approach and reputation as a local and international favourite and its ability to connect with Hong Kong’s discerning dining crowd and cultural spirit embody exactly what this series is all about. We're proud to collaborate with Lorenzo and his team, and even more proud that every dish contributes to a meaningful cause."

Bar Leone at LMO Freshly Baked (2–28 June)

Founded by bartender Lorenzo Antinori, Bar Leone has redefined what a neighbourhood drinking experience can be. Now, Antinori brings that same approachability to the bakery counter with three exclusive dishes that reflect Bar Leone’s playful but refined culinary identity:

Spinach ricotta pie (HK$78)
Vegetarian option, made with ricotta, spinach and organic egg, ideal for a summer snack.

Italian chicken salad (HK$98)
A chicken salad with cherry tomatoes, basil, capers, parmesan reggiano and Bar Leone's smoked olives.

Tramezzini tonno e pomodoro sandwich (HK$88)
Sandwich made with Japanese milk bread, white tuna salad and vine tomatoes – a Roma signature.

"In my family, food was always what brought everyone together. That’s something we try to capture at Bar Leone — comfort, connection, and a sense of place. So when Chef Richard asked me to be part of The Tastemaker Series, I didn’t hesitate. It’s a chance to share flavours from my childhood while supporting a cause that matters," said Antinori.

The Tastemaker Series celebrates the city’s top homegrown culinary talent. Each month, a different icon is invited to reinterpret their flavours in a casual, grab-and-go format while contributing to a meaningful cause: MINDSET, the registered charity of the Jardine Matheson Group focused on raising awareness and transforming perceptions of mental health.

Each item in The Tastemaker Series reflects the high standards of Mandarin Oriental, The Landmark Hong Kong and the creativity of its partners. For every item sold, HK$10 is donated to MINDSET.

Each collaboration runs for four weeks, with a new partner introduced monthly from May to September 2025. Details on the exclusive creations from Bar Leone, The Chairman, TATE Dining Room and Little Bao will be revealed throughout the campaign period.

Chef Richard Ekkebus, Director of Culinary Operations & Food & Beverage of Mandarin Oriental, The Landmark Hong Kong, is celebrating the city’s most renowned restaurants and bars through the launch of The Tastemaker Series - a limited-time collaboration spotlighting five of Hong Kong’s most iconic culinary talents.

Each month from May to September, a new partner will debut exclusive grab-and-go dishes, reinterpreting their signature flavours in a casual format designed for Central’s on-the-move crowd, exclusively for LMO Freshly Baked.

The five collaborators are:

- Yardbird (May)

- Bar Leone (June)

- The Chairman (July)

- TATE Dining Room (August)

- Little Bao (September)

Each month, guests can enjoy a limited-time menu of sandwiches, soups, salads or pies, all crafted with the same attention to detail and ingredient integrity these venues are known for. While each collaboration reflects the individual identity of its contributor, the series represents a unified celebration of Hong Kong’s world-class food and beverage scene.

"The Tastemaker Series celebrates the extraordinary talent that defines Hong Kong as one of the world’s most exciting culinary capitals," said Chef Ekkebus.

"Many of these icons have reshaped modern dining and mixology in Hong Kong, and here, they reinterpret their craft in an approachable, everyday format. What makes this series even more meaningful is that all five collaborators are homegrown brands, each one shaped by Hong Kong’s distinctive culture, energy, and evolution as a global dining destination. We’re honoured to provide this platform at LMO Freshly Baked and to contribute to our community through MINDSET."

LMO Freshly Baked is kicking off the series in May with one-Michelin-star Yardbird, the modern izakaya that has shaped a new era of casual dining in Hong Kong since its opening in 2011. Founded by Matt Abergel and Lindsay Jang, Yardbird earned cult status for its beak-to-tail Three Yellow chicken skewers grilled over binchotan charcoal.

Exclusively available from 6 to 31 May, items will include the Yardbird caesar salad (HK$88) with crispy jako* and nori, the chicken schnitzel sandwich (HK$88) with cabbage and sesame kewpie*, and the Three Yellow chicken meatball soup (HK$58) made with Yardbird’s signature homemade meatballs, negi*, and myoga ginger.

Beyond the plate, the initiative also supports MINDSET, the registered charity of the Jardine Matheson Group focused on raising awareness and transforming perceptions of mental health. For every item sold, HK$10 will be donated to support MINDSET’s programmes and partnerships in the community.

LMO Freshly Baked at the LANDMARK Atrium branch, opened in March 2025, has quickly become known for its pastries, sandwiches, and soups crafted by the hotel’s culinary team.

Anantara Thailand resorts feature in The White Lotus Season 3

Three Anantara Thailand resorts have been officially announced as filming locations for the Emmy-winning series HBO Original series The White Lotus. Filmed across Thailand, The White Lotus Season 3 features the country's landscapes, cultural heritage, and architecture to create a mesmerising setting for the series’ signature plot twists and social satire.

Each of the featured Anantara resorts embodies the essence of Thai island life, from the beaches of Koh Samui to Phuket’s coastline. The Anantara Lawana Koh Samui Resort, Anantara Mai Khao Phuket Villas, and Anantara Bophut Koh Samui Resort are key settings for a fictional resort, The White Lotus Thailand.

Anantara Bophut Koh Samui Resort

Set along the shores of Bophut Beach, Anantara Bophut Koh Samui Resort is one of the island’s most iconic resorts, with architecture inspired by Southern Thai heritage. The resort has 106 rooms, suites and beachfront pool suites and is within walking distance to the Fisherman’s Village. Occupying a lush site that was once a coconut plantation, the resort’s landscaping — including lotus ponds and a spa garden — was designed by architect Bill Bensley.

Multiple locations within the property are featured as The White Lotus Thailand, including the signature Thai-style lobby, security station, tree-lined resort entrance, the employee parking lot and resort’s jewellery store.

Anantara Lawana Koh Samui Resort

Situated on a private beach in Chaweng, Anantara Lawana Koh Samui Resort blends modern luxury with Samui’s rich history. One of the most distinctive settings in The White Lotus Season 3 is the resort’s Singing Bird Lounge, a treehouse-style bar nestled within the branches of a 120-year-old tree. Announced as a key filming location for the bar scene, the lounge offers panoramic ocean views and draws inspiration from the island’s bird-singing contests, a tradition that attracts thousands of spectators.

As guests sip handcrafted cocktails at sunset, the melodies of Samui’s avian performers create an unforgettable atmosphere.

Anantara Mai Khao Phuket Villas

Locations in Anantara Mai Khao Phuket Villas have been designated The Wellness Sanctuary, Spa, and Belinda’s room in the HBO series. With 183 villas and suites along Mai Khao Beach in Phuket, this hideaway is renowned for its seclusion and luxury.

Guests looking to experience The White Lotus firsthand can book The Lotus Awakening Escape package*, a four-night Phuket and Koh Samui retreat. The stay includes experiences at all three Anantara resorts featured, as well as unique lotus-inspired activities that reveal the heart of Thailand.

Begin with the allure of Phuket on the golden sands of Anantara Mai Khao, breaking up poolside relaxation only for excursions, wellness rituals and sumptuous dining. The next stop is Koh Samui, where the team at Anantara Bophut will take you on a spiritual journey and arrange private dining and spa indulgences. Hong Kong Cuisine 1983 Chinese New Year menu honours Chef Silas Li’s Hakka heritage

Source: Hong Kong Cuisine 1983. A selection of five dishes from A Menu Inspired by Hakka Heritage.
Source: Hong Kong Cuisine 1983. A selection of dishes from A Menu Inspired by Hakka Heritage.

Hong Kong Cuisine 1983 is ushering in the year of the snake with a menu that honours the rich and vibrant culture of the Hakka people. Created by Chef Silas Li, the menu pays tribute to his roots, featuring dishes crafted with fresh, high-quality ingredients and time-honoured techniques.

Hakka cuisine is celebrated for its bold yet balanced flavours and its focus on natural, seasonal ingredients.

“The Hakka people have a long culinary tradition of preserving authentic flavours,” Chef Silas Li shared.

“This menu was designed to celebrate those time-honoured practices while celebrating the essence of Chinese New Year. Every dish tells a story of heritage, family, and the joy of sharing food with loved ones.”

The menu combines classic Chinese New Year flavours with traditional ingredients like fermented red bean curd, black bean sauce, dried oysters, and mushrooms. These umami-rich components not only elevate the dishes but also carry deep cultural significance, symbolising prosperity, wealth, and harmony.

Highlights Include:

- Braised seasonal vegetables with bamboo fungus and elm fungus (HK$480) - A lighter dish that shows off the simplicity and elegance of Hakka cuisine. The bamboo and elm fungi add textural contrast to the seasonal vegetables while celebrating the freshness of the ingredients.

- Steamed eel with black bean and garlic sauce (HK$1,200) - A harmonious blend of tender eel, fermented black beans, and garlic. Symbolising fortune and strength, this dish is an auspicious choice for the Lunar New Year. (Advance order required.)

- Deep-fried Wagyu beef cheek with Sichuan spicy sauce (HK$480) - A bold, contemporary offering that combines the richness of tender Wagyu beef cheek with a fiery Sichuan spice blend.

- Beijing-style tiger prawn (HK$238/pc): prawns are a symbol of happiness and celebration.

- Sweet and sour Mandarin fish (HK$1,280): this striking centrepiece balances sweet and tangy flavours, representing harmony and joy. In Chinese culture, the word for fish (鱼, yu) is a homophone for surplus or abundance (余, yu), and therefore symbolises wealth and prosperity.

Serving the fish whole, with the head and tail intact, represents unity and completeness, wishing for a good beginning and end to the year. In Hakka culture, the sweet and sour flavour profile embodies balance and resilience, reflecting the harmony and strength that define the community’s values.

Lohei with fresh salmon (HK$580): lohei (撈起), also known as yusheng (鱼生), is a colourful fish salad enjoyed during Chinese New Year, symbolising prosperity, abundance, and unity. Featuring fresh salmon, shredded vegetables, crispy crackers, and sweet sauces, each ingredient carries auspicious meanings, such as wealth, harmony, and vitality.

Diners gather to toss the salad high with chopsticks while shouting blessings, as the height of the toss is believed to indicate the fortune and success in the year ahead. This vibrant and joyous tradition is a highlight of the festive season, promoting renewal and positivity. (Advance order required.)

The Trio of Festive Cakes

This year, Hong Kong Cuisine 1983 is also presenting a trio of handcrafted puddings that blend tradition with contemporary appeal. Preparation begins days in advance to achieve the perfect texture and balance of flavours for these 100% in-house creations. Presented in elegant, festive boxes adorned with auspicious symbols, these puddings are tokens of prosperity and good fortune.

Chef Silas Li’s dedication shines through in these 100% in-house creations, where preparation begins days in advance to achieve the perfect texture and balance of flavours. Presented in elegant, festive boxes adorned with auspicious symbols, these puddings are more than desserts—they are tokens of prosperity and good fortune, made to share the joy of Chinese New Year with loved ones

- Turnip cake with conpoy and smoked preserved meats (HK$268, early bird HK$218): using premium Hokkaido conpoy, white radish, and high-quality cured meats, this savoury classic is elevated with a subtle smoky aroma. The balance of savoury and sweet notes are designed to evoke nostalgia and highlight traditional New Year flavours. Achieving the perfect texture requires careful preparation - each ingredient must be evenly blended and steamed at precise temperatures for a firm yet tender finish. The most challenging aspect of this pudding is balancing the smokiness of the cured meats with the freshness of the radish to create a harmonious profile.

- Sweet pudding with Okinawa brown sugar (HK$228, early bird HK$198): this glutinous rice cake features imported Okinawa brown sugar, known for its deep caramel-like aroma. Its soft, sticky texture is achieved through the slow blending and steaming of the rice flour and sugar mixture, ensuring a melt-in-your-mouth consistency. Chef Li chose Okinawa brown sugar to add a modern twist to a classic favourite.

- Water chestnut and red bean sweet cake (HK$218, early bird HK$188): this pudding pairs crunchy water chestnut with the rich mouth-feel of red beans, offering textural contrast. The two-layered cake requires delicate handling to achieve its distinctive layers and flavours. Red beans are chosen to represent happiness, and water chestnut for vitality.

Accompanied with an amalgamation of red gift boxes at the lobby to the photo wall placed at the entrance of MO BAR, guests can also spot collections showcased on panelled bar shelves, pedestals and lounge tables that convey Baccarat's joie de vivre.

There will be exclusive festive cocktails at MO BAR, two designed by Kim Jung Hoo, Head Bartender at MO BAR Singapore and two crafted by Hidenori Fukuda, Head Bartender of B Bar, Tokyo. Each incorporates Christmas-sy notes, and will be served in Baccarat glassware.

A Christmas edition of an afternoon tea experience is to be launched as well. In honour of Baccarat's 260 years in craft excellence, Christmas-themed savouries and sweets will include a collaboration cake - Baccarat Gem - presented on Baccarat crystalware.

Displayed on tiered trays and wares from Baccarat, curated savouries in the Enchanted Festive Tea Soirée (S$88++ per person) include foie gras logs with Christmas berries, Grand Marnier spiked nougat de Sainte-Maure and Dungeness Crab Gâteau with xérès-infused watermelon; while the sweet spectrum features red wine granite, Moss for a green tea travel cake coated in dacquoise and the 'petit' Baccarat gem.

The Baccarat Gem (S$18++) is a limited-edition cake available at The Mandarin Cake Shop in the shape of an octagon fashioned after Baccarat's crystals. Crafted by Mandarin Oriental, Singapore's team of pastry chefs, the cake in Baccarat's iconic red brings together luxurious flavours in every bite with rosemary cream, wild strawberry compote, eglantine coulis, and a delicate layer of Earl Grey tea mousse.

A curated selection of Baccarat products including tumblers, vases and tea sets will be available, complete with gift boxes. Those who wish to learn more about each product can scan tableside QR codes, or speak directly with Baccarat sales representation.

In celebration of the holiday season, a room package has been introduced. Guests can obtain two nights' stay in luxurious suites, complemented by an exclusive in-room amenity, Baccarat x Mandarin Oriental afternoon tea and cocktail experiences, and a Baccarat Gift Set featuring a pair of crystal tumblers to take home.
